Persimmon season only comes for a short time each winter, so when it does, we try to find as many ways as we possibly can to enjoy these candy-like fruits. We grow a special variety of persimmons, known as the Rojo Brillantes, which are a cross between the Hachiya and Fuyu varieties that are most commonly found in grocery stores. The hybridization of the two allows for the best qualities of each to shine through, without the chance of experiencing the "cottonmouth" sensation that can happen with an unripe Hachiya.
