Persimmon season only comes for a short time each winter, so when it does, we try to find as many ways as we possibly can to enjoy these candy-like fruits. We grow a special variety of persimmons, known as the Rojo Brillantes, which are a cross between the Hachiya and Fuyu varieties that are most commonly found in grocery stores. The hybridization of the two allows for the best qualities of each to shine through, without the chance of experiencing the "cottonmouth" sensation that can happen with an unripe Hachiya.
As if they weren't beautiful enough in their natural state, our friend Ana from Muy Delish created the most stunning work of art that just so happens to also be, well, muy delish.
This Persimmon Tart will instantly steal the show and fool your guests into thinking you spent hours creating this masterpiece, when in reality, it only takes 20 minutes of active prep time! A quick cookie crust is topped with a cream cheese and sugar filling, and then layered with the cinnamon sugar dusted persimmon slices.
