Have you ever looked at the ingredients on the back of a generic mayonnaise label? Let’s just say they are not Whole30® or Paleo compliant. A simple swap using part avocado mayo and fresh avocado adds creaminess from healthy fats and a boost of fiber. Plus, the shortcut of using rotisserie chicken helps this to come together quickly and with a better texture and flavor than canned chicken.
It doesn’t just stop at simple & healthy- did we mention it’s full of delicious flavor? Dijon mustard adds a tangy kick that pairs well with the natural sweetness of the grapes. For crunch, we add in celery and walnuts. Serve this Whole30®/Paleo Chicken Salad in romaine lettuce cups and top with broccoli sprouts for a complete, nutrient-dense meal!
