# Recipe Highlight: Darling Clementines® Onion Fennel Salad
February 27, 2019 | By: The Darling Dish
Oh no! Guests have shown up unexpectedly at your door for a visit and you don’t have any food to offer. Don’t panic - you have everything you already need in your kitchen: Darling Clementines®, onions, fennel bulbs, vinegar and black pepper.
These ingredients combine to make an [Onion Fennel Salad](https://www.lgssales.com/recipes/darling-clementine-onion-fennel-salad/), the perfect afternoon snack or appetizer for your guests. Just peel and cut the clementines into ½ inch thick slices for the base, creating a “flower power” of sorts on the large serving plate. Next, thinly slice and arrange the sweet onions over the “flower” with a drizzle of olive oil for extra flavor. Season fresh pepper on top, garnish with walnut pieces and voila! An easy, delish dish for those in-a-pinch moments or when you’re craving a zesty, light snack.
Move over chicken salad - there’s a tastier, healthier option for host essentials! Though these ingredients may be a little odd at first, one bite is sure to change your mind. Sweet clementines and savory onions combine with the toppings to create a myriad of flavors and textures that plain ole chicken salad just doesn’t have.
